Heralded chef Dario Manca struck out on his own in 2024, opening 28-seat experimental fine diner Attimi by Dario Manca in Paddington. Looking to give guests a truly bespoke dining experience, Attimi sees Dario (previously executive chef of Rosmarino) applying his unique culinary lens to contemporary Italian cuisine and Michelin-starred European-style dining. Attimi offers two kinds of set degustation menu – one shorter offering taking guests on a ‘quick Italian tour’, and a larger 12-course degustation described as a sensory exploration of Italy’s diverse regions. An a la carte menu is also available to guests, including the likes of beef rump cap tartare with black bagna cauda mayo and stracciatella, Fremantle octopus with lardo di colonnata, and smoked labneh, game farm rabbit cavatelli with goat cheese cream and caper leaves, and charcoal-grilled Queensland coral trout with cardamom and prosciutto di Parma sauce. On the drinks front, Attimi offers a region-spanning wine list encompassing skin-contact wines across plenty of classic varietals, as well as a clutch of rare beers.
