The local bakery scene welcomed a big-name player into its midst in 2024, with the long-awaited opening of Baker D. Chirico’s Newstead flagship causing ripples across Brisbane. One of Melbourne’s most highly regarded bakeries, the renowned bread maker and pastry slinger’s new space at the base of Cavcorp’s Long Island development on Longland Street follows in the footsteps of Baker D. Chirico’s Carlton location. Melbourne-based architecture practice March Studio has spearheaded the interior aesthetic, crafting a next-level design inspired reminiscent of an inverted bread basket. Head honcho Daniel Chirico has earned a reputation as one of Melbourne’s best bakers, specialising in loaves and pastries made using traditional bread-making techniques, natural fermentations and biodynamic stone-milled wholegrain flour. His Brisbane expansion features a full-scale baking kitchen, which is utilised to make a range of artisanal products inspired by French, German and Italian baking cultures. A concise cafe-style menu will be launched in 2025 (no eggs will feature, sorry pals!), with plenty more additions to come.
