Bar Hugo is a West End watering hole from Nick Sebar and Shaun Kelly, a pair of drink-pouring pros who snagged a space on Hardgrave Road for what they describe as a wine and vermouth bar. The duo has transformed an old Thai restaurant into a warm, timber-clad bar and nosh spot, with a interior space bolstered by a back deck and an alfresco garden area at the venue’s rear. Here, the focus is on wine, vermouths and low-ABV drinks and non-alcoholic drinks. Nick, previously manager at Savile Row, is overseeing the vermouth and cocktail offering, with more than 20 vermouths and a tight list of six cocktails on offer. Meanwhile, Shaun – formerly maître d’ at Bacchus Restaurant in South Bank – has assembled a 40-strong wine list that covers classic old-world styles and new-age vino. Bar Hugo is also be doing food – expect a menu of small, easily plated entree-style dishes that can be divvied up amongst groups or enjoyed as a simple snack.
