The group behind Longwang, Pompette, Dark Shepherd, Rich & Rare and Fosh unveiled its latest venture, Stilts, at the beginning of 2025. Perched above the new Kangaroo Point Bridge, Stilts offers panoramic views of the Brisbane River, Story Bridge and the city skyline. Inspired by Queenslander architecture, the restaurant features elevated design elements, including a spacious dining room with floor-to-ceiling windows, marble countertops, and a live seafood tank. Helmed by head chef Dan Hernandez, Stilts’ menu offers high-quality Australian meats and seafood, including premium wagyu, Australian lobsters, and Moreton Bay bugs, prepared with a modern Australian and Mediterranean flair. The beverage program boasts a diverse wine list and cocktails, while seasoned hospitality veterans manage the floor.
