Troy Brown’s passion for wine began more than a decade ago in Puligny-Montrachet, Burgundy, where he fell in love with the region’s wines – a love affair that prompted him to learn as much as he could about viticulture and embark on a global wine journey. Although plans to start a vineyard in Italy were postponed due to family reasons, Troy and his wife Natalee opened Wineology – a unique wine bar on Adelaide Street – to share their knowledge and offer wine lovers a taste of the world’s finest wines without the travel costs. Wineology features a number of state-of-the-art enomatic wine dispensers, offering 96 wines that range from light whites to bold reds, curated by head wineologist Rowena Collings. The bar’s impressive 250-bottle selection includes a mix of local and international wines, with a focus on renowned regions and specific grape varieties. As well as being a wine bar, Wineology doubles as a bottle shop, offering customers the option to purchase their favourite bottles or enjoy them onsite for a corkage fee. A food menu features tapas-style dishes designed to pair with specific wines, such as cinghiale ravioli with sangiovese or blue swimmer crab agnolotti with riesling. The elegant yet comfortable space seats 38 and is designed by Clui Design, with plush seating, marble countertops, and blush-pink accents, creating a warm and inviting atmosphere.
