Cucina Vivo’s first sitting from 5:30–7:45 pm will include a special menu for kids and a three-course menu with a glass of Chandon on arrival for adults, serving up Italian delights such as focaccia Romana, stracciatella, braised beef and truffle ragu and an Italian meringue bombe for dessert. The Fireplace at Intercontinental Sanctuary Cove is hosting its inaugural six-course New Year’s Eve Degustation dinner, showcasing its signature woodfired fare. The evening promises a remarkable journey through flavours and textures, carefully curated to celebrate the turning of the year. Each course will spotlight the meticulous skill of the culinary team and celebrate the art of woodfired cooking. This all-inclusive fine-dining experience will feature canapes such as oysters adorned with bloody shiraz gin pearls and pulled beef creme fraiche brioche, followed by citrus-cured kingfish, Skull Island tiger prawn crostini, beef tenderloin and saltbush-crusted lamb rump, and a milk-chocolate cremeux with salted-caramel coffee sauce for dessert. Your first option is the Laneway Lights Party, which will stretch across the entire main level. Ticket holders will enjoy access to The Glasshouse, The Pool Deck & Lounge and Goldie’s, with resident DJs, photo ops and three bars.
