For one night only on Saturday March 15, Palette Restaurant is teaming up with Stanbroke, known for producing some of Australia’s finest beef, for an unforgettable feast. The evening celebrates the incredible versatility and craftsmanship of beef, with every course – from savoury starters to a decadent dessert – showcasing this exceptional ingredient in all its glory.
The event will kick off with a Q&A session hosted by Stanbroke’s Richard Galibrath and Executive Chef Dayan Hartill-Law, who will chat about Stanbroke’s unique approach to sustainable farming and their remarkable beef programs. Then, it’s time to eat. The culinary adventure will see diners guided through a thoughtfully curated menu that highlights the endless possibilities of beef, with each course created to surprise, delight and redefine how beef is experienced. Expect dishes like 9+ wagyu-tongue pastrami, bone marrow, wagyu-eye carpaccio, wagyu shin, brisket and neck cooked over ironbark, and desserts like beef-fat caramel tarts.
