Bug rolls and bubbles – Rick Shores is taking over Carafe Wine for one day only

The bug rolls at Rick Shores are legendary. Delightfully crisp with the perfect sauce-to-bug ratio, it’s little wonder why folks drive from all over just to get their fix. In news that is guaranteed to tickle the taste buds of foodies, Rick Shores is taking over Southport’s Carafe Wine for one day only. We’re told diners can expect bubbles from iconic champagne house Pommery alongside a seriously drool-inducing menu. Read on for all of the delicious details …

Snagging a booking at Rick Shores can be quite the challenge, with reservations stretching weeks (months) in advance. If you’re keen to enjoy a taste of the lauded restaurant’s famous fare with a side of Pommery champagne, go ahead and mark your calendar for Friday, November 22 for the Rick Shores takeover event of the season.

Diners will arrive to a red carpet stretching through the carpark with the aroma of charcoal-grilled fare filling the air. A glass of Pommery Brut Royal will be the perfect precursor to the raw bar featuring oysters, scallops and abalone dressed with a selection of Thai vinaigrette, habanero soy and green nahm jim. Next up is a tipple of Pommery Blanc De Blanc with Rick Shores’ famous bug roll and skewers of buttermilk chicken and habanero and salmon belly.

Take a seat at the long table and enjoy mains of barbecue pork with Mexican onions and coriander, and crispy skin snapper with red salsa, which will be cooked over coals right before your eyes. The bold flavours will perfectly complement Carafe Wine’s pinot noir and pinot gris.

The takeover event is the first of its kind, Carafe Wine’s owner Archie Cox says. “I just wanted to do something different,” he tells us. “I called James, the executive chef at Rick Shores, and he was on board.”

There is a lunch sitting from 12:00–3:00 pm as well as a dinner option from 7:00–10:00 pm. Tickets are $220 per person and are limited to just 50. If a feast filled with fancy champagne, bug rolls and barbecue pork sounds like your vibe, email Carafe Wine  to nab a spot.
