Four years ago, brothers Matt and Nick Stanley were slinging tacos at Currumbin Community Markets, giving Gold Coasters the first taste of what would become the key menu item at Costa Taco. With outposts now in Palm Beach, Byron Bay and the recently opened Broadbeach venue, Costa Taco is one of the city’s most-loved hospitality brands. Now, the brothers are set to debut a brand-new cafe concept, Mercado. Here’s everything we know so far …
With three successful venues under their belt, you’d forgive Matt and Nick Stanley for resting on their laurels. Luckily for us, their vision was always bigger than one concept. In a matter of weeks, the brothers will unveil Mercado, an experiential all-day cafe in Mermaid Waters. Transforming the former Espresso Moto space, Mercado will deliver a casual yet refined offering that melds Southern California’s vibrant food culture with our relaxed cafe culture.
In terms of the menu, we’re told to expect a selection of burritos, Mexican plates and, Mercado’s signature, ‘drowned eggs’ – a Mexican-style green shakshuka. A few Costa faves, including the beloved chilaquiles will make an appearance, but with a breakfast-friendly twist. Then, for lunch, there will be a selection of sandwiches, including the pollo Milanese, which will deliver a new take on the humble chicken schnitzel.
“Our team has been incredible in helping us create something that feels authentic yet uniquely our own,” says Matt. “Just like in San Diego and LA, where Mexican flavours have become part of the coastal culture, we wanted to bring that same relaxed vibe to the Gold Coast … it’s really about honouring traditional flavours while giving classics that distinctive SoCal twist.”
In an effort to support the evolving food scene, of an evening, Mercado will host pop-up vendors. “Having experienced the journey from market stall to multiple venues, we’re passionate about supporting the next generation of hospitality innovators. This space lets us do both – run a great cafe while helping emerging hospitality brands share their creations with our community,” says Nick.
