Southport gets its first taste of TRYP by Wyndham with the opening of Amore Ristorante

In a matter of weeks, the Gold Coast is set to welcome a brand-new hotel – TRYP by Wyndham Southport. This week, we’ll get our first taste of the anticipated hotel’s culinary offering with an Italian restaurant, Amore Ristorante, which will officially open its doors to the public on Thursday, November 21. Here’s what we know so far …

TRYP by Wyndham Southport will the first of four towers that will form part of Azzura Investment Limited’s $3.8 billion Imperial Square development, which is set to come to life on Meron Street. While the hotel is still a couple of weeks off opening, the venue’s onsite restaurant Amore Ristorante will welcome diners from this weekend. Boasting one of the Gold Coast’s largest pizza ovens imported from Italy, pizza and pasta will form a significant portion of the menu.

Executive chef Robert McWhinnie has curated the offering, which spans from casual eats to elevated Italian cuisine. Graze on primi plates of oysters and Venetian scallops alongside blossoms stuffed with crab mousse and burrata from Byron Bay. The pasta is a stand-out, with each pillow and strand made in house. The wagyu beef bolognese is set to be a crowd favourite, followed by the pumpkin tortellini and the fresh crab and Ballina pipis.

Seafood features heavily in the mains, with the likes of mahi mahi with agrodolce, bay lobsters and local wild-caught fare, while those with a preference for land-based protein can enjoy whole boneless chicken with lemon-cashew cream and whole lamb shoulder. In true Italian style, desserts range from chocolate cannoli, tiramisu made with Lavazza coffee and a fiery bombe Alaska, which ignites table side for a little drama.

Rounding out Amore Ristorante’s offering is a carefully curated wine list that highlights Italy’s renowned vineyards alongside local favourites and cocktails crafted by the venue’s mixologists.
