Alongside your seafood feast you can enjoy antipasto like prosciutto with melon and woodfired cherry tomatoes, seasonal salads, and hot dishes such as porchetta with caramelised apple sauce, slow-roasted Milly Hill leg of lamb with salt bush, and garlic and herb roasted beef with Yorkshire pudding. The buffet will also feature mouth-watering sides and condiments, as well as a selection of decadent desserts, including a grazing chocolate and stone fruit table, ice-cream trolley and cannoli station. If you’re craving a little end-of-year extravagance, you can partake in The Fireplace’s inaugural six-course New Year’s Eve Degustation dinner, showcasing its signature woodfired fare. The evening promises a remarkable journey through flavours and textures, carefully curated to celebrate the turning of the year. Each course will spotlight the meticulous skill of the culinary team and celebrate the art of woodfired cooking. This all-inclusive fine-dining experience will feature canapes such as oysters adorned with bloody shiraz gin pearls and pulled beef creme fraiche brioche, followed by citrus-cured kingfish, Skull Island tiger prawn crostini, beef tenderloin and saltbush-crusted lamb rump, and a milk-chocolate cremeux with salted-caramel coffee sauce for dessert.
Each course will be paired with a premium beverage offering, bookended by a glass of Taittinger champagne on arrival and a jaffa espresso martini, served table side with dessert. Shortly before midnight, you’ll be ushered away to the fountain terrace to enjoy the resort’s countdown festivities.
