Pizza is the answer as Cadillac Supper Club unveils a new Italian-American direction

When Nick Stanton and Mark Catsburg opened the doors to Cadillac Supper Club, they did so with an open mind. Although the initial offering of steak frites and the Cadillac burger was an instant hit, they felt like there was something missing. In the hospitality game, you don’t often get time to sit and think. When the pair were faced with a forced closure due to scheduled power upgrades to the building, they had the first opportunity to step back and look at the first few months and ask themselves some tough questions. Those questions have prompted a new direction for the Palm Beach favourite.

After a few rounds, the answer to the question of what was missing at Cadillac Supper Club, like so many of life’s quandaries, all came back to pizza. Pizza was the missing puzzle piece. For Nick and Mark, who also own Coolangatta’s vibey Bar Evelyn and have travelled extensively to eat across multiple states in America, pizza is not just about dough and toppings. It’s a way of breathing life into ingredients, and in turn, creating the kind of atmosphere that brings people together over a slice.

As lady luck would have it, Marana Forni had an oven available. While it meant bidding farewell to the fan-favourite frites, the decision was a no-brainer for the pair, who had four days to not only install a new oven, but create an entirely new menu from scratch. Not ones to shy away from a challenge, they leaned into the venue’s Italian-American roots, full throttle.

The brand-new menu at Cadillac Supper Club offers a succinct-yet-satisfying selection of pizza, which is made using a dough recipe that the gents say is a continuation of the recipe from Bar Evelyn and other past ventures. A new kind of dough that represents the culmination of everything they’ve learned thus far. Think crisp, airy crusts topped with a scattering of the freshest ingredients. But it’s not just about the pizza, Cadillac’s menu also features a selection of pastas, including the crowd-favourite vodka pasta, evolving small plates and specials that rotate frequently to keep things fresh and exciting.

There have been some changes behind the bar too. The cocktail and wine program has evolved to adopt a more Italian lean. The goal, we’re told, is to establish Cadillac Supper Club as a quality pizzeria, a great place to catch up with friends and an even better place to kick back with drinks until late.

And linger you will, listening to vinyl DJs spinning tunes to suit the mood, any day of the week. Loosely inspired by the timeless neighbourhood bistros scattered across New York and Los Angeles, places like Jones in Hollywood that have not only endured the test of time, but the kind of establishments that successfully walk the line between restaurant and bar. From 5:00 pm, diners can pull up a seat, slide into a plush ruby-hued velvet booth or perch up at the bar. As the night drifts on, the atmosphere subtly shifts – the lights get a little dimmer, the music amps up and the space transitions from a bustling restaurant to bar. You needn’t tell us twice.
